Turkey Meatballs

These meatballs are delicious! And the great part is that you can make a full batch or even a double batch and then freeze the rest. There is nothing better than having meatballs in the freezer that you just need to take out and nuke in the microwave for a few minutes before dinner!

Difficulty Level: Easy

Ingredients:

  • 1 lb of 99% fat-free ground turkey
  • 1/2 cup part skim ricotta cheese (keeps the meat moist)
  • 1/2 cup bread crumbs
  • 1 egg, beaten
  • 1/2 cup fat-free milk
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 Tb chopped fresh basil

Directions:

Preheat oven to 375 degrees.

Mix all ingredients together (I found it's easiest by hand!) and form into 20 golf-ball sized meatballs. (They are a little soft - just do your best!) Brown the meatballs in a non-stick skillet sprayed with PAM, flipping once. Bake at 375 degrees for 15 minutes.
