Impossibly Easy Spinach Pie

This spinach pie is absolutely delicious! We were really worried when we made it because the original recipe said that it yielded 6-8 servings and it just did not look like very much food. But the Eggbeaters and Bisquick really puff this up as it bakes. We ended up cutting the pie into quarters and the points are still only 3.5 points per slice. You could eat half of this pie for just 7 points if you wanted to! We served it with baked fries for a delicious 5.5 point dinner.

Ingredients:

  • 1 tablespoon margarine (points were calculated using Country Crock w/Calcium)
  • 4 medium green onions (scallions), sliced
  • 2 garlic cloves, finely chopped
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed to drain (I squeezed it very tight with paper towels after thawing it under warm water in a colander)
  • 1/2 cup small curd fat-free cottage cheese
  • 1/2 cup HeartSmart Bisquick® mix
  • 1 cup fat-free milk
  • 1 teaspoon lemon juice
  • 1/4 teaspoon pepper
  • 3/4 cup Eggbeaters
  • 3 tablespoons grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg

Directions:

1. Heat oven to 350ºF. Grease 9-inch pie plate. Melt butter in 10-inch skillet over medium heat. Cook onions and garlic in butter 2 to 3 minutes or until onions are tender. Stir in spinach; spread mixture in pie plate. Spread with cottage cheese.

2. Stir Bisquick mix, milk, lemon juice, pepper and eggs until blended. Pour into pie plate; sprinkle with Parmesan cheese and nutmeg.

3. Bake about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Sprinkle with additional Parmesan cheese, if desired.

Yields: 4 slices (3.5 points per slice)
