Jaime's "Make Your Own Burritos"

"Make your own burrito night" is always a big hit at our house. I usually eat 2 of these for a delicious and filling 5 point dinner! You'll see that you don't need greasy beef or mounds of cheese to make a tasty burrito.

Ingredients:

Main Ingredients:

  • 1 (7-inch) 98% fat-free Mission flour tortilla - 1.5 points
  • 2 Tb shredded 2% Sharp Cheddar Cheese - 1 point
  • 2 Tb black beans, drained - .1 point
  • 2 Tb refried beans - .2 point

    Optional "0-Point" Ingredients

  • 2 Baked Tostidos chips, crushed - 0 points
  • Diced tomatoes or salsa - 0 points
  • Diced cucumber - 0 points
  • Diced bell pepper - 0 points
  • Diced onion - 0 points
  • Lettuce - 0 points

    Optional "Extra-Point" Ingredients


  • 2 Tb Yellow Spanish Rice - .5 point
  • 2 Tb low-fat sour cream - 1 point
  • 2 Tb guacamole - 1.5 points

Directions:

Make rice as directed. Drain and rinse black beans. Heat black and refried beans thoroughly in microwave. Place cheese, beans, and rice on tortilla. Microwave 15 seconds or until cheese starts to get melty. Add cold ingredients. Fold up burrito and serve.
