These were really tricky to make... my fillo dough
kept falling apart! I had to throw 1 sheet out for every 1 that I
used! It was worth it though. The turnovers are delicious. Special

- 6 oz. (approx. 1.5 cups) peeled and chopped cooking apples
- 3/4 teaspoon lemon juice
- 1/8 cup sugar
- 1/2 Tb flour
- 1/4 tsp cinnamon
- Pinch salt
- Pinch nutmeg
- 5 sheets Athen's 9x14" Fillo (Phyllo) Dough, thawed (found
in frozen food aisle)
- Butter-flavored non-stick cooking spray
Preheat oven to 400 degrees. Spray a cookie sheet with non-stick
cooking spray.
Combine apples and lemon juice in a small bowl. Add sugar, flour, cinnamon,
salt and nutmeg; toss well and set aside.
Carefully unroll fillo sheets onto a smooth, dry surface. Immediately
cover with plastic wrap, then a damp paper towel. Uncover to remove
fillo sheets as needed. Promptly recover.
For each turnover: Lay 1 fillo sheet on a flat surface and spray lightly
with non-stick cooking spray. Fold the pastry in half lengthwise and
spray again with cooking spray. Place 1/4 cup of the apple mixture onto
1 end of the strip and flatten out a little with the back of a spoon.
Fold the left bottom corner over the mixture to form a triangle. Keep
folding back and forth into a triangle to the end of the strip. Place
the triangle seam side down onto the cookie sheet. Repeat the procedure
for the remaining turnovers. Lightly spray the tops of each turnover
with cooking spray. Bake for 8-10 minutes or until golden. Allow to
cool slightly. Serve warm with a little fat free cool whip or ice cream
for additional points.
Note: always keep any fillo sheets not being used covered with plastic
wrap to prevent drying out. Unused fillo sheets can be re-frozen for
later use.
