Yummmmmmm I am so glad I came across this recipe!
This is an extremely fun, filling, and flavorful dish! Enjoy!!
- 1 (10-oz) bag of fresh spinach
- 1 (15-oz) can of chickpeas (rinsed and drained)
- 1 (15-oz) can of diced tomatoes (do not drain!)
- 1.5 lbs of sweet potatoes (2 medium), peeled and diced into 1-inch
cubes
- 2 scallions (green onions), thinly sliced
- 1/4 tsp. cinnamon or to taste (Don't overdo it!)
- 1 Tb curry powder
- 1/2 to 1 teaspoon cumin
- Salt and fresh ground pepper, to taste
Optional
1 cup uncooked rice (basmati works well with this!) -- Adds extra
points!!
Steam the sweet potato until just tender, about 10 minutes
or so.
Meanwhile, in a wok or large skillet, combine the tomatoes (not drained)
chickpeas (drained), scallions, and half can of water. Bring to a boil;
add spinach, turn down heat, cover, and simmer until spinach shrinks
just a bit. (Just a couple minutes, you don't want to destroy it.)
Add the sweet potatoes and spices to the wok and stir to combine the
flavors. Simmer covered for a few minutes. Then, let sit covered a few
minutes after cooking to let flavors mix.
Top each serving with several shakes of salt and pepper, to taste.
Optional: Serve over rice (for extra points)
Yields: 6 (1.5 cup) servings (2.5 points per serving)

* If you divide the recipe into 4 (large) serving instead, the NI would
be: 233 calories, 1.8 g. fat, 16.5 g. fiber (4 points -- even with the
WW "fiber cap" that is not bad!! Without the fiber cap, this
would be 1.5 points for that huge serving!!)
